2. Goji Berry Muesli Bars - Serves 3-4
2 cup of rolled oats
½ cup shredded coconut
½ cup honey
½ cup of melted butter
½ cup pre-soaked goji berries
How To: Hand mix rolled oats, shredded coconut, honey, butter and pre-soaked berries until well mixed. Add some water until desired consistency (i.e. paste) is achieved. Mold the mixture into energy bars or use biscuit molds, or make balls with your hands or use a fork on a plate to make compact energy bars.
Place bars into a shallow baking tray. Bake in oven on 180 degrees for 20 minutes or until brown.
